What I have found works is to ask questions and then follow up with more questions and let them do the talking. It is pretty simple.
Who, what, when, where, why and how are all very easy, excellent questions that can keep a conversation going indefinitely. You don't need to think of anything insightful or try to impress, but instead let them provide the material and you just provide being genuinely interested in who they are as a person.
When the conversation is over, they truly appreciate the time spent with you, as unlike the majority of people, you gave them the opportunity to share their thoughts without trying to impress them.
