Depends on where you're from. If you're an EU citizen, go ahead, it is, legally, like going to another city in your country.
Be careful though, as both the French and Poles tend to have a bad level of English, make sure you know basic sentences as to find your way around (how much does it cost? Where is the train station? Can I please have a coffee/bottle of water/sandwich etc).
If you're not an EU citizen, then you should get a Schengen visa from the first country you intend to visit. If you're looking to do 2 separate trips, you may be asked questions at border control, but if you're doing one trip during which you're first going to, let's say, France and then Poland, make sure to get a visa from the French embassy (or the Polish one if you're going to Poland first).

As someone who lived in France and is often going there, here's some very important advice: don't spend all of your time in Paris, if you can! If you're there for 3 days, then stay there, but if you're there for 5 days or more, it may be worth visiting other cities like Lille, Reims, Strasbourg... They're all beautiful, and have their own identity and culture.

Well, then you may need a visa, as countries with green passports aren't members of the EU. It may be useful to check whether there's an agreement between Italy and your country!

I wonder in how many days people will get back to their normal lives and be able to travel as they used to before.
